🧺 Preserving the Harvest

Keeping What the Season Gave Us

A garden rarely gives everything in tidy little portions.

Sometimes there are three tomatoes.

Sometimes there are thirty-seven.

Sometimes the herbs grow faster than we can use them,

the berries arrive all at once,

and the zucchini have apparently been making plans while we were sleeping.

Preserving the harvest is simply a way

of letting one season accompany us into another.

Drying,

freezing,

storing,

steeping,

simmering,

and putting things away for later

allow us to keep a little of what was abundant

when it was abundant.

Not everything needs to last forever.

Only long enough to meet us when we need it.

♨️Dried Food

Water leaves.

Flavor stays.

Drying is one of the simplest ways to preserve what the garden gives us

from herbs

and fruit to vegetables

and ingredients we can tuck into the pantry for another day.
