🍜 Sunlit Summit Tofu & Noodles

A simple savory bowl of crisp tofu, green beans, tomatoes, rice noodles, and Sunlit Summit Spice.

Some meals begin with a recipe.

Others begin by looking at what is already in the kitchen and wondering what might happen if it all goes into the same pan.

This one was an experiment.

It was also good enough to write down.

Ingredients

For the Tofu

1 package extra-firm tofu


1 tablespoon soy sauce


½ teaspoon garlic powder


Avocado oil, for frying

For the Bowl

½ of the prepared tofu


About ½ cup green beans


About ½ cup canned diced tomatoes


About ½ cup cooked rice noodles


Sunlit Summit Spice, to taste

🍳 Prepare the Tofu

Cut the tofu into long rectangular pieces.

Place the entire package of tofu in a bowl or shallow dish and add 1 tablespoon soy sauce and ½ teaspoon garlic powder.

Allow the tofu to soak up the seasoning.

Heat a little avocado oil in a pan and fry the tofu until lightly browned on the outside.

For this recipe, use approximately half of the prepared tofu. Save the remaining tofu for another meal.

🍜 Make the Bowl

Add about ½ cup green beans to the pan and cook until they begin to soften.

Add approximately half of the prepared tofu and ½ cup canned diced tomatoes.

Add Sunlit Summit Spice to taste and allow everything to cook together until hot and well seasoned.

Add about ½ cup cooked rice noodles and gently toss everything together, allowing the noodles to warm and pick up the tomatoes, seasoning, and flavors from the pan.

Serve warm.

A little savoriness.
