🍵Mountain Matcha

Green tea

ground to its very essence.

Matcha is not steeped and removed.

The whole tea leaf comes with you.

Made from specially grown and processed green tea leaves

that are finely ground into powder.

Matcha is whisked directly into

water

milk

or whatever you are creating.

Nothing is strained away.

That is part of what makes matcha so distinctive

both in the cup and in the kitchen.

More about Matcha

Matcha comes from the tea plant

Camellia sinensis

the same plant that gives us green

black

white

and oolong teas.

What changes is how the plant is grown and handled.

Before harvest

tea plants intended for matcha are shaded.

After harvesting

the leaves used to produce tencha are processed

dried

and eventually finely ground into the brilliant green powder we know as matcha.

The result is something quite different from an ordinary cup of green tea.

Instead of pouring water over a leaf and then removing it

you consume the powdered leaf itself.

What Does It Taste Like?

Good matcha has layers.

Green and vegetal

Fresh

Slightly sweet

Sometimes grassy

And underneath it all is umami

that deep

savory quality that gives matcha its unusual fullness.

It can be assertive on its own

but it also plays beautifully with herbs

plant milks

maple

vanilla

spices

citrus

and flowers

Which makes it a very interesting thing to experiment with.

☕ Matcha & Caffeine

Matcha naturally contains caffeine.

It also contains L-theanine

an amino acid naturally present in tea.

That combination is one reason matcha has become such a beloved alternative to an

ordinary cup of coffee.
