Matcha comes from the tea plant
Camellia sinensis
the same plant that gives us green

white
and oolong teas.
What changes is how the plant is grown and handled.
Before harvest
tea plants intended for matcha are shaded.
After harvesting
the leaves used to produce tencha are processed
dried
and eventually finely ground into the brilliant green powder we know as matcha.
The result is something quite different from an ordinary cup of green tea.
Instead of pouring water over a leaf and then removing it
you consume the powdered leaf itself.
What Does It Taste Like?
Good matcha has layers.
Green and vegetal
Fresh
Slightly sweet
Sometimes grassy
And underneath it all is umami
that deep
savory quality that gives matcha its unusual fullness.
It can be assertive on its own
but it also plays beautifully with herbs
