🍽️ Lemon Herb Mountain Chicken Bowl

Bright herbs, garden vegetables, and a little mountain sunshine in one bowl.

Some meals aren’t meant to impress anyone.

They’re simply meant to taste good, nourish well, and become something you make again.

This is one of those meals.

Tender chicken, rice linguine, carrots, green beans, and spinach come together with fresh lemon and Sunlit Summit—my savory mountain herb blend of rosemary, thyme, marjoram, parsley, turmeric, ginger, and black cumin.

Bright enough for summer.

Comforting enough for a cold evening.

And simple enough for an ordinary Tuesday.

Ingredients

2 chicken breasts, cubed


Rice linguine, enough for your table


2 carrots, thinly sliced


1 handful green beans


1 small handful spinach


½ onion, sliced, optional


Juice of ½ lemon


Fresh lemon zest, optional


1–2 teaspoons olive or avocado oil


Salt, to taste


Pepper, if desired

🌞 Sunlit Summit

Start with approximately 2 teaspoons, then adjust to taste.

Because this seasoning began with the herb proportions already used in this dish, it slips naturally into the recipe without changing its character.

🥄 Directions

Season the cubed chicken generously with Sunlit Summit and a little salt. Allow it to rest while the pasta water comes to a boil.

Cook the rice linguine according to the package directions. Before draining, reserve about ½ cup of the cooking water.

Warm the oil in a skillet and gently sauté the onion, if using, with the sliced carrots.

Add the chicken and cook until nearly done.

Add the green beans and continue cooking until tender-crisp.

Finally, fold in the spinach just until wilted.

Add the cooked linguine, fresh lemon juice, and a splash of the reserved pasta water.

Toss everything together.

Taste.

Add another pinch of Sunlit Summit, more lemon, or salt until the bowl tastes like yours. The original recipe finishes in the same way—with lemon, pasta water, herbs, and a final adjustment to taste.

🌿 Keeper’s Tip

Don’t underestimate the pasta water.

A small splash helps the herbs, lemon, and cooking juices cling to the noodles without requiring a heavy sauce or a lot of added fat.

And don’t measure the spinach too carefully.

This is exactly the kind of recipe that welcomes another handful.

Rosemary — 2 parts


Thyme — 2 parts


Marjoram — 1 part


Parsley — 1 part


Turmeric — ¼ part


Ginger — ¼ part


Black Cumin — ⅛ part

Rosemary and thyme provide the savory backbone, marjoram and parsley soften and round it, turmeric and ginger bring subtle warmth, and black cumin leaves a quiet earthy finish.

The original recipe particularly highlights rosemary, thyme, turmeric, ginger, and parsley for their flavor contributions.

Wonderful With
